Have a Chocolate Chip Cookie!

#ohjoyandco is baking this holiday season! Beside from our love to craft we love to bake! The smell of chocolate chips in the oven if filling up our kitchen today. Our Chocolate Chip Cookie mix makes yummy chewy cookies. And did we mention that we made sure there are lots of chocolate chips inside so that each cookie is filled with that melting chocolate in each bite (and yes on to your fingers too)!

Equipments you will need will be an oven, a mixer, measuring spoon, spatula, small ice cream scooper and a cookie sheet lined with parchment or wax paper.
Ingredients you will needs is 1 egg and 2/3 cups of soft butter (roughly about 150g), 1/2 tsp of vanilla extract and 1 jar of our Chocolate Chip Cookie Mix.

Cream the butter in the mixer until fluffy and the color has lightened (about 3 mins). Add the egg (crack into a bowl first before pouring to the mixing bowl with the butter). Continue to mix at medium speed until the egg and butter combines. Add the vanilla extract. Mix until all comes together. Switch the mixer to STIR and add in dry ingredients inside the cookie mix jar. Stir until all the ingredients are combined. (If your mixer does not have a STIR setting you can just use your spatula and fold the dry mixture with the butter mixture until everything is combined). Using the ice cream scooper or a spoon- scoop about 1 tbsp and drop the batter on to a cookie sheet. Keep in mind that the batter will melt and flatten out as it cooks. So make sure you line them up at least 2 inches apart. We made about 28 cookies out of this recipe. If you want a bigger cookie make sure you line them up further apart as well.

Bake at 375ºF for 8 to 10 mins. In our kitchen it bake exactly 10 mins.

Ones they are done (edges will be brown) let it cool completely before storing them in an air tight cookie container.

Easy Bake Brownies

It's the season for baking! This will be a nice recipe to bake with the little chefs in the house too.

If you think you need some special skill to make these brownies we might just be able to show you how easy our brownie mix is to make and it bakes a perfect chewy and soft brownie!
For your baking equipment you will only need a 9 x 9 square pan or a 9 x 5 loaf pan, bowl, whisk (no need for any mixer), spatula or wooden spoon, 1/3 measuring cup and teaspoon. Oh! - and an oven of course.
For added ingredients, you will need 1 and 1/2  large egg, 1/3 cup canola oil (or any vegetable oil) and 1/2 tsp of vanilla extract.
We know that after reading that  1 and 1/2 large egg you would think how can you half an egg! The way we did it is we cracked the egg in a small bowl and spoon out half of the egg yolk and egg white. Another way is to crack the egg in to a small bowl and slightly beat the egg to mix the egg yolk and white with a fork then spoon out half of it.
The next step is pretty easy because ones you have measured out all your wet ingredients then just mix them in a bowl using a whisk. Then add the brownie mix. Fold the dry ingredients or stir with your wooden spoon or spatula until all the ingredients are mix together evenly. Pour the batter in to a 9 x 5 loaf pan (we like a thicker brownie). Make sure to spread the batter evenly. Bake at 350ºF for 25 to 30 mins.

Enjoy a Minty Chocolate Drink this Holiday Season

Every Holiday Season the longer nights and shorter days bring a bit of that "sarap ng simoy ng hangin" (sweet breeze). And enjoying a warm hot chocolate drink with that peppermint taste just brings the spirit up especially sharing the drink with friends and family. 


At the Oh Joy! & Co  shop we sold these Choco Minty Drink in Maison Jars and quite a bit of people will be receiving this as a gift. And we thought maybe we would share the step-by-step on how to enjoy this drink. 
The very first step before you open the jar is to shake the jar to mix all the ingredients inside. Just shake until you see that all the powder inside has turned to one cocoa color (alternately you can use a chopstick to stir the powder and peppermint candies in the jar to mix them up).  This is ready to spoon into your mug anytime you want to have a Choco Minty Drink. Our recommended mix is 3 tbsp of this choco minty mix with hot milk (yes milk not water). If you prefer a richer chocolate drink 4 tbsp will do the job.
Make sure your milk is hot and not just warm or else the peppermint candies in the mix will not melt.
Add in your marshmallows (not included in our Choco Minty Drink Maison Jar) and watch it float and slowly melt like snow. :)
